      目的 以山药废渣为原料研究以淀粉酶和蛋白酶水解法制备水不溶性膳食纤维的工艺条件。方法 试验选取淀粉酶的用量、酶解时间、蛋白酶的用量、酶解时间四个因素,确定最佳酶解工艺条件。结果 淀粉酶用量为2 U·mL-1,酶解时间为80 min,蛋白酶用量为3 U·mL-1,酶解时间为30 min。结论 该法可提高山药的利用度,促进山药相关产品的开发利用。
英文摘要:
      Objective To study the process conditions of preparing water insoluble dietary with amylase and protease with Dioscorea batatas Decne Residu as raw material.Methods The amount of amylase,digestion time,the dosage of the protease and enzymolysis time were tested to determine the optimal enzymatic hydrolysis conditions.Results The amount of amylase was 2 U·mL-1,the digestion time was 80 min,the dosage of the protease was 3 U·mL-1 and the enzymolysis time was 30 min.Conclusions The method could improve the exploitation of Dioscorea,promote the development and utilization of Dioscorea related products.
